  • 1/4 cup mayonnaise
  • 2 tbsp chili paste (adjust for spice preference)
  • 1 clove fresh garlic, minced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 2 tbsp chopped cilantro or parsley (for garnish)

Instructions

  1. Boil the eggs in a saucepan covered with cold water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 12 minutes.
  2. Transfer cooked eggs to an ice bath until cooled. Crack and peel under running water.
  3. Slice peeled eggs in half lengthwise, scoop out yolks into a bowl, and mash with mayonnaise, chili paste, garlic, Dijon mustard, salt, and pepper until smooth.
  4. Spoon or pipe the mixture back into the egg whites.
  5. Garnish with chopped cilantro or parsley before serving.
