- 1 thumb-sized piece fresh ginger, minced
- 4 garlic cloves, minced
- 1 tsp red chili flakes (adjust to taste)
- 2 bell peppers, chopped
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped (optional)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse and pat dry the chicken breasts. Season with salt, pepper, and red chili flakes.
- Heat olive oil in a large skillet over medium heat. Add diced onions (if using) and minced garlic; sauté until fragrant (about 3 minutes).
- Push aromatics to one side of the pan. Add chicken breasts and cook until browned on both sides (approximately 5 minutes each side).
- Pour in coconut milk, scraping any flavorful bits from the pan. Bring to a simmer and cook for 15 minutes or until chicken is cooked through.
- Stir in chopped bell peppers during the last 5 minutes of cooking. Add lime juice just before serving.
