- 6 cups stale sourdough bread, cubed
- 1 can (14 oz) marinated artichoke hearts, drained and chopped
- 1 cup celery, diced
- 1 cup onion, diced
- 2 cups low-sodium vegetable broth
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 4 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, melt butter. Sauté onions and celery until softened, about 5-7 minutes.
- Stir in artichoke hearts, thyme, and parsley; cook for another 2-3 minutes.
- In a large bowl, combine the sautéed mixture with stale sourdough cubes. Gradually add vegetable broth while mixing gently until moistened but not soggy.
- Transfer to a greased baking dish. Cover with foil and bake for 25-30 minutes; remove foil for the last 10 minutes to crisp the top.
- Let cool slightly before serving.
