  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup crushed graham crackers
  • 1 cup mini marshmallows (divided)
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Melt the butter in a saucepan over low heat. Remove from heat and mix in granulated and brown sugars until well combined.
  3. Stir in eggs, one at a time, followed by vanilla extract.
  4. Sift in cocoa powder, flour, baking powder, and salt. Mix until just combined.
  5. Fold in crushed graham crackers and half of the mini marshmallows.
  6. Pour batter into the prepared dish and smooth evenly. Bake for 25-30 minutes until set but fudgy.
  7. Halfway through baking, sprinkle remaining marshmallows and chocolate chips on top; return to oven for an additional 5 minutes.
