  • 2 lbs Russet potatoes, peeled and thinly sliced
  • 2 cups heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 1/2 cup Parmesan cheese, grated (plus more for topping)
  • 3 cloves garlic, minced
  • 4 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. In a saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Stir in heavy cream and simmer.
  3. 3. Remove from heat; whisk in cheddar, Gruyère, and half of the Parmesan until smooth. Season with salt and pepper.
  4. 4. In a greased baking dish, layer half of the potatoes, followed by half of the cheese sauce. Repeat layers.
  5. 5. Cover with foil and bake for 45 minutes. Remove foil, add remaining Parmesan on top, and bake uncovered for another 20 minutes until golden brown.
