- 2 lbs Russet potatoes, peeled and thinly sliced
- 2 cups heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 1/2 cup Parmesan cheese, grated (plus more for topping)
- 3 cloves garlic, minced
- 4 tbsp unsalted butter
- Salt and pepper to taste
- Fresh herbs (optional)
Instructions
- 1. Preheat the oven to 375°F (190°C).
- 2. In a saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Stir in heavy cream and simmer.
- 3. Remove from heat; whisk in cheddar, Gruyère, and half of the Parmesan until smooth. Season with salt and pepper.
- 4. In a greased baking dish, layer half of the potatoes, followed by half of the cheese sauce. Repeat layers.
- 5. Cover with foil and bake for 45 minutes. Remove foil, add remaining Parmesan on top, and bake uncovered for another 20 minutes until golden brown.
- 6. Let rest for 10 minutes before serving.
