  • 4 cups fresh spinach (chopped)
  • 1 cup ricotta cheese (whole milk)
  • ½ cup grated Parmesan cheese
  • 2 garlic cloves (minced)
  • 1 egg (for egg wash)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped spinach and cook until wilted.
  3. In a mixing bowl, combine sautéed spinach, ricotta cheese, Parmesan cheese, salt, and pepper. Mix well.
  4. Roll out the thawed puff pastry on a floured surface and cut into squares or circles.
  5. Place a spoonful of the filling in the center of each pastry piece. Fold corners over and seal edges with a fork.
  6. Brush each pastry with beaten egg for a golden finish.
  7. Bake for 15-20 minutes or until puffed and golden brown.
