- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup coconut cream
- 1 cup pineapple chunks, well-drained
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, combine graham cracker crumbs and melted butter; press firmly into the bottom of the prepared pan.
- In another bowl, beat cream cheese until smooth. Gradually add sugar; mix until silky.
- Fold in coconut cream and pineapple chunks.
- Add eggs one at a time, mixing gently after each addition. Stir in vanilla extract.
- Pour filling over crust; bake for 45-50 minutes until set but slightly jiggly in the center.
- Allow to cool completely before refrigerating for at least two hours. Cut into bars and serve.
