Ingredients

  • 1 cup canned pumpkin puree
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar (adjust for sweetness)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1½ cups graham cracker crumbs, finely crushed
  • 8 oz chocolate coating (optional)

Instructions

  1. In a large mixing bowl, combine pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, cinnamon, and nutmeg until smooth.
  2. Gradually mix in graham cracker crumbs until the mixture is thick enough to hold shape.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  4. Scoop out about one tablespoon of the mixture and roll it into bite-sized balls.
  5. If desired, melt chocolate in a microwave-safe bowl. Dip each ball into the melted chocolate and place on parchment paper to set.
  6. Chill again until the chocolate hardens before serving.
