  • 3/4 cup light brown sugar
  • 1 cup chopped pecans
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup light corn syrup
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together brown sugar, corn syrup, eggs, melted butter, and vanilla until smooth.
  3. Fold in chopped pecans.
  4. Roll out the pie crust and cut circles to fit muffin tins. Fill each crust about three-quarters full with the filling mixture.
  5. Bake for 20-25 minutes until golden brown and set.
  6. Allow to cool before gently removing from the tin.
