  • 2 cups whole milk
  • 2 cups assorted vegetables (zucchini, broccoli, carrots)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup plain breadcrumbs
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice vegetables into thin, even pieces.
  3. In a saucepan over medium heat, melt butter. Stir in flour to form a roux until golden brown. Gradually whisk in milk until smooth.
  4. Add mozzarella and parmesan cheeses; stir until melted. Season with salt and pepper.
  5. In a greased baking dish, layer half of the vegetables followed by half of the cheese sauce. Repeat layers.
  6. Sprinkle breadcrumbs on top along with extra cheese if desired. Bake for 30-35 minutes until golden brown and bubbly.
