  • 1 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian herbs
  • ½ tsp paprika
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, chopped onion, salt, pepper, and Italian herbs. Mix gently until just combined.
  2. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook for about 10 minutes until golden brown and slightly softened.
  3. Shape the meat mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Preheat oven to 375°F (190°C). Bake meatballs for approximately 20 minutes or until fully cooked.
  5. In a baking dish, layer sautéed potatoes at the bottom. Place baked meatballs on top and sprinkle with cheddar cheese.
  6. Return to oven and bake for an additional 15-20 minutes until cheese is melted and bubbly.
