  • 3 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups low-sodium chicken broth
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Prep your ingredients by dicing the carrots and celery, and mincing the garlic.
  2. In a large pot over medium heat, heat olive oil and sear the chicken breasts until golden brown (about 5 minutes per side).
  3. Add the diced carrots, celery, and minced garlic to the pot; sauté until softened (3-4 minutes).
  4. Pour in the chicken broth to cover all ingredients generously. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
  5. Stir in thyme, parsley, and lemon juice after removing the chicken from the pot.
  6. Shred the chicken using two forks and return it to the pot. Serve hot.
