  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, deveined
  • 1 cup full-fat coconut milk
  • 4 cloves garlic, minced
  • 1 cup bell peppers (red and yellow), sliced thinly
  • 2 scallions, sliced thinly
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp Jamaican jerk seasoning
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients: Rinse and pat dry the shrimp. Slice bell peppers and scallions.
  2. Cook the pasta: Boil salted water in a large pot. Add pasta and cook until al dente (about 8-10 minutes). Drain, reserving some pasta water.
  3. Sauté shrimp & veggies: Heat olive oil in a skillet over medium heat. Add minced garlic, then shrimp; cook until pink and opaque (about 3-4 minutes).
  4. Add coconut milk & seasoning: Stir in coconut milk and jerk seasoning; let simmer until bubbly.
  5. Toss everything together: Add cooked pasta, bell peppers, and lime juice into the skillet. Mix gently, using reserved pasta water for creaminess as needed.
  6. Garnish & serve: Remove from heat and stir in cilantro and scallions. Serve hot.
