  • 1 medium yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 cup bell peppers (chopped; any color)
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp dried thyme
  • Juice of 1 lemon (for brightness)

Instructions

  1. Soak the black-eyed peas overnight in water and rinse before cooking.
  2. In a large pot over medium heat, sauté chopped onions and bell peppers for about 5 minutes until softened.
  3. Add the smoked ham hock and chicken broth to the pot; bring to a gentle boil.
  4. Stir in the soaked black-eyed peas, thyme, and cayenne pepper; reduce heat and simmer for about 45 minutes until tender.
  5. Add long-grain rice to the pot and cook for another 20 minutes until rice is fluffy and liquid is mostly absorbed.
  6. Remove from heat, stir in fresh lemon juice, and serve warm.
