  • 34 boneless, skinless chicken breasts (about 600g)
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 4 tbsp unsalted butter
  • 1 cup tomato puree (240ml)
  • 1 cup heavy cream (240ml)
  • 2 tsp garam masala
  • 2 tsp cumin
  • 2 tsp coriander
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Cut chicken into bite-sized pieces. In a bowl, mix yogurt with garam masala, cumin, coriander, garlic, ginger, and salt. Toss chicken until well coated and marinate for at least 30 minutes.
  2. In a large skillet over medium heat, melt butter until bubbly. Add finely chopped onions and cook until golden brown (5-7 minutes).
  3. Stir in minced garlic and ginger; cook for another minute. Add tomato puree along with cumin and coriander; cook until thickened (about 5 minutes).
  4. Add marinated chicken to the pan. Cook until no longer pink (approximately 10 minutes), stirring occasionally.
  5. Lower heat and stir in heavy cream; simmer for an additional 5 minutes.
  6. Remove from heat and sprinkle fresh cilantro before serving hot with rice or naan.
