- 3–4 boneless, skinless chicken breasts (about 600g)
- 4 cloves fresh garlic, minced
- 1-inch piece fresh ginger, grated
- 4 tbsp unsalted butter
- 1 cup tomato puree (240ml)
- 1 cup heavy cream (240ml)
- 2 tsp garam masala
- 2 tsp cumin
- 2 tsp coriander
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Cut chicken into bite-sized pieces. In a bowl, mix yogurt with garam masala, cumin, coriander, garlic, ginger, and salt. Toss chicken until well coated and marinate for at least 30 minutes.
- In a large skillet over medium heat, melt butter until bubbly. Add finely chopped onions and cook until golden brown (5-7 minutes).
- Stir in minced garlic and ginger; cook for another minute. Add tomato puree along with cumin and coriander; cook until thickened (about 5 minutes).
- Add marinated chicken to the pan. Cook until no longer pink (approximately 10 minutes), stirring occasionally.
- Lower heat and stir in heavy cream; simmer for an additional 5 minutes.
- Remove from heat and sprinkle fresh cilantro before serving hot with rice or naan.
