- 1 cup pineapple chunks (fresh or canned)
- 2 bell peppers (any color), chopped
- 1 medium red onion, sliced
- 4 garlic cloves, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1 tsp ground ginger
- 2 tbsp freshly squeezed lime juice
- 2 tbsp olive oil
- Salt and pepper to taste

Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a sheet pan with nonstick cooking spray.
- In a large bowl, mix chicken thighs with soy sauce, honey, minced garlic, lime juice, and ground ginger. Let marinate for 15 minutes.
- Chop the bell peppers and slice the red onion. Add them to the marinated chicken and toss until well combined.
- Spread the mixture evenly on the prepared sheet pan. Scatter pineapple chunks over the top.
- Bake in the preheated oven for 25-30 minutes or until chicken is cooked through.
