- 1 cup Guinness stout
- 2 large eggs (room temperature)
- ½ cup unsalted butter (melted)
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 2 tsp vanilla extract
- For Frosting: 1 cup heavy cream
- For Frosting: 1 ½ cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix melted butter and sugar until creamy. Add eggs one at a time and then stir in vanilla extract.
- Gradually add Guinness to the wet mixture; it will bubble slightly—this is normal!
- Combine the dry ingredients with the wet mixture gently until just mixed; do not overmix.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
- While cooling, whip heavy cream until soft peaks form and gradually mix in powdered sugar to achieve desired frosting consistency.
- Once cupcakes are completely cool, frost generously.
