  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • Pita bread for serving (optional)
  • 1 cucumber, grated and moisture squeezed out
  • 1 cup Greek yogurt
  • 1 garlic clove, minced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cut chicken breasts into evenly sized cubes. In a bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper. Add chicken cubes and coat well. Let marinate in the fridge for at least 30 minutes or overnight.
  2. In another bowl, mix grated cucumber, Greek yogurt, minced garlic, dill, lemon juice, salt, and pepper. Refrigerate until ready to serve.
  3. Preheat grill to medium-high heat. Thread marinated chicken onto skewers (soak wooden skewers beforehand if using). Ensure they are snug but not overcrowded.
  4. Grill skewers for about 10-12 minutes total, turning occasionally until golden brown and cooked through (165°F internal temperature).
  5. Remove from heat and serve warm with pita bread and tzatziki sauce on the side.
