Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 4 garlic cloves, minced
- 2 tsp dried oregano
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- Pita bread for serving (optional)
- 1 cucumber, grated and moisture squeezed out
- 1 cup Greek yogurt
- 1 garlic clove, minced
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Cut chicken breasts into evenly sized cubes. In a bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper. Add chicken cubes and coat well. Let marinate in the fridge for at least 30 minutes or overnight.
- In another bowl, mix grated cucumber, Greek yogurt, minced garlic, dill, lemon juice, salt, and pepper. Refrigerate until ready to serve.
- Preheat grill to medium-high heat. Thread marinated chicken onto skewers (soak wooden skewers beforehand if using). Ensure they are snug but not overcrowded.
- Grill skewers for about 10-12 minutes total, turning occasionally until golden brown and cooked through (165°F internal temperature).
- Remove from heat and serve warm with pita bread and tzatziki sauce on the side.
