  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, coat the chicken breasts with olive oil, minced garlic, oregano, salt, and pepper. Let marinate for at least 15 minutes.
  3. Wash and halve the baby potatoes; set aside.
  4. In a baking dish, arrange the seasoned chicken in the center and surround it with potatoes. Generously sprinkle Parmesan cheese over both.
  5. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
