  • 1 lb Sirloin or Ribeye steak, cut into bite-sized pieces
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 lb Yukon Gold potatoes, halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil halved potatoes in salted water until fork-tender (10-15 minutes). Drain and cool.
  2. In a skillet over medium-high heat, melt 2 tablespoons of butter. Sear steak bites in batches for 2-3 minutes per side until browned.
  3. Lower heat and add minced garlic to the skillet; sauté for about 30 seconds until fragrant.
  4. In another skillet, heat olive oil over medium heat and cook boiled potatoes cut-side down until golden brown (5-7 minutes).
  5. Combine crispy potatoes with steak bites in the skillet, pouring remaining melted butter over the mixture. Toss gently and garnish with fresh parsley before serving.
