Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fresh cremini or button mushrooms, chopped
- 4 cloves garlic, minced
- 4 tbsp unsalted butter, divided
- 1 cup freshly grated Parmesan cheese
- 1/2 cup heavy cream
- 2 tsp fresh thyme or parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Carefully create pockets in each chicken breast without cutting all the way through.
- Heat olive oil in a skillet over medium heat. Sauté chopped mushrooms and minced garlic until golden brown.
- Stir in 2 tablespoons of butter, thyme, and Parmesan until melted and creamy. Generously fill each chicken pocket with the mixture.
- Add remaining butter to the skillet and sear each stuffed chicken breast on both sides until golden brown (about 3-4 minutes per side).
- Transfer chicken to an oven-safe dish and bake for 20-25 minutes or until the internal temperature reaches 165°F.
