  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh cremini or button mushrooms, chopped
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter, divided
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tsp fresh thyme or parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Carefully create pockets in each chicken breast without cutting all the way through.
  2. Heat olive oil in a skillet over medium heat. Sauté chopped mushrooms and minced garlic until golden brown.
  3. Stir in 2 tablespoons of butter, thyme, and Parmesan until melted and creamy. Generously fill each chicken pocket with the mixture.
  4. Add remaining butter to the skillet and sear each stuffed chicken breast on both sides until golden brown (about 3-4 minutes per side).
  5. Transfer chicken to an oven-safe dish and bake for 20-25 minutes or until the internal temperature reaches 165°F.
  6. For an optional creamy sauce, add heavy cream and remaining Parmesan to the skillet over low heat until thickened. Pour over baked chicken before serving.
