  • 1 tsp ground nutmeg (freshly grated preferred)
  • 1 cup eggnog (high-quality)
  • ½ cup unsalted butter (softened)
  • 3 large eggs
  • 1 tsp vanilla extract (or spiced rum)
  • 2 cups powdered sugar (for frosting)
  • 8 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter and dust with flour.
  2. In a large bowl, whisk together flour, sugar, baking powder, nutmeg, and a pinch of salt.
  3. In another bowl, cream the softened butter with sugar until light and fluffy. Add eggs one at a time, followed by vanilla and eggnog; mix until just combined.
  4. Gradually fold dry ingredients into the wet mixture until no dry flour remains.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cooling, whip cream cheese with powdered sugar until smooth; gradually add eggnog to achieve desired consistency.
  7. Once cooled, frost between layers and on top of the cake.
