  • 3 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter (melted)
  • 1 cup chopped toasted pecans
  • 1 cup sweetened shredded coconut
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk together cocoa powder, flour, baking powder, and sugar. Add eggs, milk, and melted butter; beat until smooth.
  3. Pour the batter into the prepared pan evenly and bake for 12-15 minutes or until a toothpick comes out clean.
  4. Immediately flip the cake onto a powdered sugar-dusted kitchen towel, peel off the parchment paper, and roll it up from one end while still warm. Let it cool completely.
  5. For the frosting, combine melted butter, sugar, egg yolks, evaporated milk, coconut flakes, and chopped pecans in a saucepan over medium heat. Stir continuously until thickened (about 10 minutes).
  6. Unroll the cooled cake gently and spread frosting inside before rolling it back up tightly. Dust with powdered sugar before serving.
