Instructions

  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and a pinch of salt in a bowl.
  3. In another bowl, mix pumpkin puree with granulated sugar and brown sugar until smooth. Beat in eggs one at a time and stir in vanilla extract.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Drop heaping tablespoons of batter onto prepared baking sheets, spacing them apart.
  6. Bake for 12-15 minutes until springy to touch; cool completely on wire racks.
  7. For the filling, beat softened butter with powdered sugar and milk until light and fluffy.
  8. Assemble by piping or dolloping filling between two whoopie pie halves.
