  • 1 cup pineapple juice (pure)
  • 3 cloves fresh garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon sesame oil
  • Salt & pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. Prep the Marinade: In a large bowl, whisk together pineapple juice, soy sauce, honey, lime juice, ginger, garlic, and sesame oil until well combined.
  2. Marinate the Chicken: Add chicken breasts to the marinade ensuring they are fully coated. Cover with plastic wrap and refrigerate for at least 30 minutes (up to overnight for best flavor).
  3. Preheat the Grill: Heat your grill to medium-high (about 375°F/190°C).
  4. Grill the Chicken: Remove chicken from marinade and place on the grill. Cook for 6-7 minutes per side or until internal temperature reaches 165°F (75°C). Baste with leftover marinade during the last few minutes.
  5. Rest & Serve: Let chicken rest for 5 minutes before slicing. Garnish with chopped green onions and serve.
