  • 1 lb pizza dough
  • 2 tbsp olive oil
  • 8 oz fresh mozzarella cheese, torn into pieces
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced (assorted colors)
  • 1/2 red onion, thinly sliced
  • 2 cups fresh baby spinach
  • 1/4 cup basil pesto
  • 1/4 cup green goddess dressing
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Allow pre-made dough to sit at room temperature for about 30 minutes or roll out homemade dough on a floured surface to about 12 inches in diameter.
  3. Transfer the dough to a baking sheet or pizza stone and brush with olive oil.
  4. Spread basil pesto over the dough, leaving a small border around the edges.
  5. Evenly scatter cherry tomatoes, sliced bell peppers, red onion rings, and spinach over the pesto.
  6. Top with torn mozzarella pieces and sprinkle grated Parmesan on top.
  7. Bake for 12-15 minutes until cheese is melted and golden brown.
  8. Allow to cool slightly before drizzling with green goddess dressing, slicing, and serving.
