Ingredients
- 2 medium zucchinis (about 300g)
- 1 cup freshly grated Parmesan cheese (about 100g)
- 2 tsp garlic powder
- 1 cup panko breadcrumbs (about 100g)
- 1 large egg
- 1/2 cup all-purpose flour (about 60g)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash the zucchinis thoroughly and cut them into sticks about half an inch thick.
- Set up three bowls: one with flour seasoned with salt and pepper, one with whisked egg, and the last with panko breadcrumbs mixed with grated Parmesan and garlic powder.
- Dip each zucchini stick in flour, then in egg, and finally coat well with the breadcrumb mixture.
- Arrange the coated zucchini fries on the prepared baking sheet and drizzle lightly with olive oil.
