  • 2 lbs russet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, grated (divided)
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat; sauté onions until translucent (about 5 minutes).
  3. In a bowl, mix heavy cream, garlic powder, salt, pepper, and half of the cheddar cheese.
  4. In a greased baking dish, layer half of the sliced potatoes; pour half of the cheese mixture over them. Repeat layers.
  5. Cover with foil and bake for 40 minutes. Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 15-20 minutes until golden brown.
