  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups green cabbage, thinly sliced
  • 1 cup carrots, shredded
  • 1 cup red bell pepper, diced
  • ¼ cup green onions, sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tbsp honey
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced

Instructions

  1. Grill or pan-sear seasoned chicken breasts over medium heat for about 6-7 minutes per side until fully cooked. Allow cooling before slicing.
  2. While the chicken cooks, prepare the vegetables: slice cabbage, shred carrots, dice red bell pepper, and chop green onions and cilantro.
  3. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until smooth.
  4. In a large bowl, combine sliced chicken with vegetables. Drizzle dressing over the top and toss gently to combine.
  5. Serve chilled or at room temperature with extra cilantro for garnish.
