- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cups green cabbage, thinly sliced
- 1 cup carrots, shredded
- 1 cup red bell pepper, diced
- ¼ cup green onions, sliced
- ¼ cup fresh cilantro, chopped
- ¼ cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp toasted sesame oil
- 1 tbsp honey
- 1 tsp ginger, minced
- 1 tsp garlic, minced
Instructions
- Grill or pan-sear seasoned chicken breasts over medium heat for about 6-7 minutes per side until fully cooked. Allow cooling before slicing.
- While the chicken cooks, prepare the vegetables: slice cabbage, shred carrots, dice red bell pepper, and chop green onions and cilantro.
- In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until smooth.
- In a large bowl, combine sliced chicken with vegetables. Drizzle dressing over the top and toss gently to combine.
- Serve chilled or at room temperature with extra cilantro for garnish.
