Instructions
- Preheat the oven to 375°F (190°C). In a bowl, mix flour and salt; cut in the cold butter until crumbly.
- Gradually add sugar and ice-cold water, mixing until a dough forms.
- Combine pitted cherries with sugar and vanilla; let sit for 15 minutes.
- Roll out half the dough into a circle and place it in a pie dish. Pour in cherry filling, then cover with another rolled-out dough circle.
- Cut slits on top for steam to escape. Bake for 40-45 minutes until golden brown.
