  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (cold, diced)
  • 1 cup old-fashioned oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine pitted cherries with sugar, lemon juice, and a bit of flour. Set aside.
  3. In another bowl, whisk together flour, oats, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumble mixture into the prepared pan. Pour the cherry filling evenly over this layer.
  5. Sprinkle the remaining crumble mixture on top and bake for 35-40 minutes until golden brown.
  6. Allow to cool completely before slicing into bars.
