Ingredients

  • 4 large bell peppers (any color)
  • 3 cups shredded cooked chicken
  • 1 cup buffalo sauce
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick spray.
  2. In a bowl, combine shredded chicken, buffalo sauce, cream cheese, garlic powder, paprika, and half of the cheddar and mozzarella cheeses.
  3. Halve each bell pepper lengthwise and remove seeds. Place in the baking dish cut side up.
  4. Generously fill each pepper with the buffalo chicken mixture.
  5. Cover with foil and bake for 25 minutes. Remove foil, top with remaining cheeses, and bake uncovered for an additional 10-15 minutes until bubbly.
