Description

Ingredients

  • 2 lbs chuck roast, cut into large chunks
  • 5 dried guajillo chiles, stems and seeds removed
  • 1 large sweet onion, chopped
  • 6 cloves fresh garlic, minced
  • 2 tsp ground cumin
  • 2 bay leaves
  • 6 corn tortillas
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Season chuck roast with salt and pepper.
  2. Soak guajillo chiles in boiling water for 10 minutes until soft.
  3. Sauté onions and garlic in a skillet until golden brown (5-7 minutes).
  4. Blend soaked chiles, sautéed onions and garlic, cumin, bay leaves, and enough beef broth to create a smooth sauce.
  5. In a large pot or Dutch oven, combine seasoned meat and blended sauce; add additional beef broth to cover.
  6. Bring to a simmer; cover and cook on low heat for about 3 hours until meat shreds easily.
