  • 12 oz ziti pasta
  • 4 cups fresh spinach
  • 15 oz ricotta cheese
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ziti in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  3. In a skillet over medium heat, sauté the spinach in olive oil until wilted (about 2-3 minutes).
  4. In a bowl, combine ricotta cheese, eggs, Italian seasoning, salt, and pepper; mix well.
  5. Layer half of the marinara sauce in a baking dish, followed by half of the ziti, half of the ricotta mixture, and half of the sautéed spinach. Repeat the layers.
  6. Pour remaining marinara sauce on top and sprinkle with mozzarella and Parmesan.
  7. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until golden brown.
