- 4 cups fresh spinach
- 15 oz ricotta cheese
- 2 cups marinara sauce (store-bought or homemade)
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ziti in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
- In a skillet over medium heat, sauté the spinach in olive oil until wilted (about 2-3 minutes).
- In a bowl, combine ricotta cheese, eggs, Italian seasoning, salt, and pepper; mix well.
- Layer half of the marinara sauce in a baking dish, followed by half of the ziti, half of the ricotta mixture, and half of the sautéed spinach. Repeat the layers.
- Pour remaining marinara sauce on top and sprinkle with mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until golden brown.
