  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 1 cup bell peppers (red and yellow), diced
  • 1 large onion, chopped
  • 1 whole Scotch bonnet pepper (adjust to taste)
  • 1 cup low-sodium chicken broth
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat 1 tbsp oil in a large pot over medium heat. Add chopped onions and sauté until soft (about 5 minutes).
