- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 2 Earl Grey tea bags
- 1 tbsp gelatin powder
- 3 tbsp cold water
- 1 tsp pure vanilla extract
Instructions
- Bloom the gelatin by sprinkling it over cold water in a bowl and letting it sit for about 5 minutes.
- In a saucepan, heat heavy cream and milk over medium heat until steaming (do not boil). Add Earl Grey tea bags and steep for 5 minutes.
- Remove tea bags, add sugar and vanilla extract, stirring until dissolved. Adjust sweetness if necessary.
- Gently warm the bloomed gelatin until fully dissolved and stir into the cream mixture until well combined.
- Pour the mixture into individual molds or cups and refrigerate for at least 4 hours until set.
- To serve, run a knife around the edges of each mold and invert onto plates. Garnish with whipped cream or fresh berries if desired.
