  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water (as directed on cake mix package)
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 2 tsp pure vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, mix red velvet cake mix, eggs, oil, and water until smooth. Pour batter into prepared pans.
  3. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  4. In a medium bowl, beat cream cheese and sugar until creamy. Add sour cream and vanilla; mix until fluffy.
  5. Place one layer of cooled cake on a serving plate, spread half of the cream cheese filling over it, then add the second layer and top with remaining filling.
