Ingredients

  • 1 ¼ cups all-purpose flour
  • ½ cup cocoa powder (Dutch-processed)
  • ½ cup unsalted butter (cold, cubed)
  • ⅓ cup granulated sugar
  • 7 oz dark chocolate (70% cocoa, chopped)
  • 1 cup heavy cream
  • 2 large eggs (fresh)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Press the mixture into a tart pan evenly across the bottom and up the sides. Bake for 15 minutes.
  4. In a saucepan, heat heavy cream until just boiling. Pour over chopped chocolate and let sit for 5 minutes; stir until smooth.
  5. Add eggs and vanilla extract to the ganache; mix well.
  6. Pour the ganache into the cooled crust and smooth out. Bake for another 20-25 minutes until the center is slightly jiggly.
