  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 medium Granny Smith apples, peeled and sliced
  • 2 tsp ground cinnamon
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). Grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of the pan.
  3. Beat cream cheese until smooth in another bowl; gradually add granulated sugar, then mix in sour cream and vanilla extract.
  4. Add eggs one at a time on low speed until just combined.
  5. Toss apple slices with cinnamon and brown sugar. Layer half of the filling over the crust, add half of the apples, then top with remaining filling and apples.
  6. Bake for 50-60 minutes until slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
