  • 1 cup freshly grated Pecorino Romano cheese
  • 2 tsp freshly cracked black pepper
  • 1 tsp salt (for pasta water)
  • 1 cup reserved pasta water

Instructions

  1. 1. Bring a large pot of water to a rolling boil and add salt until it tastes like the sea.
  2. 2. Cook spaghetti until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
  3. 3. In a bowl, finely grate the Pecorino Romano cheese and set aside half for garnishing.
  4. 4. In a separate pan, toast the cracked black pepper over medium heat until fragrant.
  5. 5. Toss the hot spaghetti into the pan with black pepper and half of the reserved cheese.
  6. 6. Gradually add reserved pasta water while tossing until creamy. Mix in the remaining cheese and serve immediately.
