- 1 cup dry red wine (like Cabernet Sauvignon)
- 2 medium sweet onions, sliced
- 4 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 cinnamon stick
- 2 bay leaves
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Set your Instant Pot to 'Sauté' mode and heat olive oil. Sauté onions and garlic until soft (about 5 minutes).
- Season beef with salt and pepper, then brown in the pot until golden on all sides.
- Add red wine and crushed tomatoes, scraping up any browned bits from the bottom. Stir in cinnamon stick and bay leaves.
- Seal the lid and cook on 'Manual' high pressure for 35 minutes. Allow natural pressure release for 10 minutes before opening.
- Remove bay leaves and cinnamon stick; adjust seasoning if needed.
- Serve over mashed potatoes or rice, garnished with fresh parsley.
