  • 23 pounds beef chuck roast, cut into 12 inch cubes
  • 1 cup dry red wine (like Cabernet Sauvignon)
  • 2 medium sweet onions, sliced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cinnamon stick
  • 2 bay leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Set your Instant Pot to 'Sauté' mode and heat olive oil. Sauté onions and garlic until soft (about 5 minutes).
  2. Season beef with salt and pepper, then brown in the pot until golden on all sides.
  3. Add red wine and crushed tomatoes, scraping up any browned bits from the bottom. Stir in cinnamon stick and bay leaves.
  4. Seal the lid and cook on 'Manual' high pressure for 35 minutes. Allow natural pressure release for 10 minutes before opening.
  5. Remove bay leaves and cinnamon stick; adjust seasoning if needed.
  6. Serve over mashed potatoes or rice, garnished with fresh parsley.
