- 2 ears of fresh corn
- 1 tablespoon chili powder
- Juice of 2 limes
- 1/4 cup chopped cilantro
- 2 cups cooked rice (white or brown)
- 1/2 cup sour cream
- 1 avocado (optional)
Instructions
- Chop cilantro and squeeze lime juice.
- Season chicken breasts with chili powder, salt, and pepper. Sauté in olive oil over medium heat for 6-7 minutes per side until golden.
