- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium sweet potatoes (about 1 lb), peeled and diced
- 2 tsp smoked paprika
- 2 tbsp olive oil
- 1 cup bell peppers, diced
- ½ cup red onion, diced
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 avocado, sliced (optional)
- Fresh cilantro (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper on a baking sheet. Bake for 15 minutes.
- Rub chicken breasts with smoked paprika, garlic powder, salt, and pepper.
- After 15 minutes, add the chicken to the baking sheet with sweet potatoes and bake for an additional 25-30 minutes until cooked through.
- Sauté diced bell peppers and red onion in olive oil over medium heat for 5-7 minutes until soft.
- Assemble bowls by layering sweet potatoes at the bottom, followed by sliced chicken and sautéed veggies. Top with avocado and cilantro if desired.
