  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 2 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 cup bell peppers, diced
  • ½ cup red onion, diced
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 avocado, sliced (optional)
  • Fresh cilantro (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper on a baking sheet. Bake for 15 minutes.
  3. Rub chicken breasts with smoked paprika, garlic powder, salt, and pepper.
  4. After 15 minutes, add the chicken to the baking sheet with sweet potatoes and bake for an additional 25-30 minutes until cooked through.
  5. Sauté diced bell peppers and red onion in olive oil over medium heat for 5-7 minutes until soft.
  6. Assemble bowls by layering sweet potatoes at the bottom, followed by sliced chicken and sautéed veggies. Top with avocado and cilantro if desired.
