Instructions
- Thinly slice the beef tenderloin against the grain. Chop onions, mince garlic, and slice mushrooms.
- In a large skillet, melt butter with oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook until fragrant.
- Add sliced mushrooms and cook until browned (approximately 7 minutes).
- Push vegetables aside and sear beef slices until browned on all sides (3-4 minutes).
- Pour in white wine to deglaze the pan, scraping up any flavorful bits. Reduce by half (around 3 minutes) and stir in beef broth.
- Sprinkle flour while stirring continuously to avoid lumps; reduce heat to low and simmer until thickened (about 5 minutes).
- Remove from heat, stir in sour cream, and season with salt and pepper before serving.
