  • 2 medium Yukon Gold potatoes, cubed (about 2 cups)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • Salt to taste
  • Pepper to taste
  • 2 tbsp vegetable oil or ghee
  • Water as needed

Instructions

  1. Wash the spinach thoroughly and chop the potatoes into small cubes.
  2. In a large pan, heat oil over medium heat. Add cumin seeds until they pop (about 30 seconds).
  3. Add the diced onion and sauté until golden brown.
  4. Stir in minced garlic and grated ginger; cook until aromatic (1-2 minutes).
  5. Add cubed potatoes, salt, pepper, coriander powder, turmeric powder, and enough water to steam. Cover and cook on low heat for 15-20 minutes until tender.
  6. Fold in the chopped spinach until wilted and fully combined.
  7. Adjust seasoning if necessary and serve hot with rice or naan.
