  • 1 pound shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 1 cup bell peppers, chopped (assorted colors)
  • 1 medium zucchini, sliced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. Chop bell peppers and zucchini into bite-sized pieces.
  2. In a bowl, combine shrimp, olive oil, lime juice, paprika, garlic powder, salt, and pepper. Marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
  4. Grill marinated shrimp for about 2-3 minutes per side until pink and opaque. Grill veggies until tender with slight char.
