- 1 bell pepper, chopped
- 2 cups low-sodium beef broth

Instructions
- In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (4-5 minutes). Add minced garlic and cook until golden (about 1 minute).
- Increase heat slightly; add ground beef. Cook until browned, breaking it apart (6-8 minutes).
- Stir in chopped bell pepper, chili powder, cumin, salt, and pepper; cook for another 2-3 minutes.
- Add diced tomatoes with juice and kidney beans; mix well (2 minutes).
- Pour in beef broth and sugar; bring to a gentle boil. Reduce heat and simmer uncovered for at least 30 minutes, stirring occasionally.
