- 2 cups powdered sugar

Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
- In another bowl, sift together the flour, baking powder, cinnamon, ginger, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Use a cookie scoop to drop rounded mounds of batter onto prepared baking sheets, spacing them apart.
- Bake for 12-15 minutes or until springy to touch; let cool on a wire rack.
- While cooling, beat together cream cheese, powdered sugar, milk, and vanilla extract until creamy.
- Once cooled, spread filling between two pumpkin cakes to create sandwiches.
