  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 3/4 cups all-purpose flour

  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
  3. In another bowl, sift together the flour, baking powder, cinnamon, ginger, and salt.
  4. Gradually mix the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Use a cookie scoop to drop rounded mounds of batter onto prepared baking sheets, spacing them apart.
  6. Bake for 12-15 minutes or until springy to touch; let cool on a wire rack.
  7. While cooling, beat together cream cheese, powdered sugar, milk, and vanilla extract until creamy.
  8. Once cooled, spread filling between two pumpkin cakes to create sandwiches.
