Instructions
- Wash and peel the potatoes; dice into small cubes. Finely chop the onion and bell peppers.
- Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden brown and tender, about 10-15 minutes.
- Stir in chopped onions and bell peppers; sauté for an additional 5 minutes until softened.
