- 1 cup celery, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 1 medium zucchini, sliced
- 1 cup green beans, trimmed
- 1 can (14.5 oz) diced tomatoes, no salt added
- 2 cups spinach or kale, chopped
- 2 tsp dried thyme or basil (or herbs of choice)
Instructions
- Prepare vegetables by washing and chopping them into bite-sized pieces.
- In a large pot over medium heat, heat 2 tablespoons of olive oil. Sauté the onions and garlic until the onions are translucent.
- Add carrots and celery; sauté for about 5 minutes until slightly softened.
- Pour in the vegetable broth and diced tomatoes (with juices). Stir well to combine.
- Add zucchini, green beans, spinach or kale along with your chosen herbs. Simmer on low heat for 20-30 minutes until all veggies are tender.
- Taste your soup and adjust seasoning as needed before serving.
