  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 medium zucchini, sliced
  • 1 cup green beans, trimmed
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 2 cups spinach or kale, chopped
  • 2 tsp dried thyme or basil (or herbs of choice)

Instructions

  1. Prepare vegetables by washing and chopping them into bite-sized pieces.
  2. In a large pot over medium heat, heat 2 tablespoons of olive oil. Sauté the onions and garlic until the onions are translucent.
  3. Add carrots and celery; sauté for about 5 minutes until slightly softened.
  4. Pour in the vegetable broth and diced tomatoes (with juices). Stir well to combine.
  5. Add zucchini, green beans, spinach or kale along with your chosen herbs. Simmer on low heat for 20-30 minutes until all veggies are tender.
  6. Taste your soup and adjust seasoning as needed before serving.
